Steps:

1. Rinse lamb chop, marinate for one hour.

2. Rinse vegetables. Blanch in boiling water with little oil and salt.

3. Glaze lamb chops with butter. Grill in oven on medium heat for 10-15 minutes until golden brown. Dish and garnish with vegetables and mint jelly.

炒饭做法同材料

西炒饭Tomato sauce fried rice

材料Ingredients:

白 饭 2碗 (隔 夜 更 佳 )plain rice 2 bowls (leftover rice prefferred)

蕃 茄 2-3个 tomatoes 2-3 pcs

洋 葱 半 个 onion 1/2pc

火 腿 数 片 ham few pieces

烟 肉 3条 bacon few pieces

杂 菜 半 杯 assorted veggies--(corn,peas and carrots) 1/2cup

调味Seasoning:

蕃 茄 浆 2汤 匙 tomato ketchup 2tbsp

糖 1茶 匙 sugar 1tsp

盐 、 生 抽 各 少 许salt,light soya sauce

制法Cooking Method:

1.烧 热 油 镬 , 炒 香 切 成 丝 的 烟 肉 、 火 腿 及 洋 葱 , 再 加 入 白 饭 及 杂 菜 炒 匀 。

1.Heat oil in wok, fry onions,bacon and ham.

Add in rice and assorted vegetables and stir well.Set aside.

2.蕃 茄 切 成 细 粒 , 加 蕃 茄 浆 及 糖 于 镬 中 煮 溶 , 再 加 入 已 炒 的 饭 兜 匀 , 加 入 适 量 盐 、 胡 椒 粉 调 味 。

2.Cut tomatoes into cubes,and fry them in pan,adding in the sugar and ketchup. Cook for a while until it bees a tomato sauce. Add in the fried rice and stir well, until all the rice is evenly covered with tomato sauce.

小贴士Cooking Tips:

选 择 较 熟 的 蕃 茄 会 更 好 味 。

Choose ripe tomatoes for this recipe.

菠萝炒饭Fried Rice With Diced Pineapple

材料及份量Ingredients and Amount:

菠萝1个1 pineapple

白饭3碗3 bowls cooked rice

虾仁80g80g shelled shrimps

叉烧80g80g roasted pork

洋葱粒2汤匙2 tbsp diced onion

红辣椒(切粒)半只1/2 chilli(diced)

葱花1汤匙1 tbsp diced spring onion

芫茜碎少许a few crushed parsley

调味料Seasoning:

鱼露2汤匙2 tbsp fish gravy

制法Cooking Steps:

1.菠萝由顶部约1/4处打横切开,将内里果肉挖出并切粒待用(约有半杯),保留原整皮壳,抹干壳内果汁,放入预热焗炉内焗热。

1.Cut pineapple at 1/4 of its length. Scoop out the flesh. Dice the flesh(1/2 cup). Retain the hollow pineapple and wipe it dry. Put it into a pre-heat oven to bake until hot.

2.洗净虾仁及抹乾,起镬爆香待用,叉烧切粒待用。

2.Wash the shrimps.Wipe them dry. Saute. Dish up.

3.烧热二汤匙油,爆香洋葱粒和红椒粒,加入白饭及调味料,炒至饭热。加入菠萝粒、叉烧粒、虾仁兜炒一会盛入菠萝壳内,最后洒上葱花及芫茜,即可以食。

3. Heat work with 2 tbsp oil. Saute spring onion and red chilli. Add cooked rice and seasoning.Stir until rice hot. Add pineapple flesh, roasted pork and strimps.Stir-fry for a while. Stuff the pineapple shell. Add spring onion and parsley.Serve hot.

小贴士Tips:

因菠萝已有酸味,请酌量放入调味料。

As pineapples gives a soury taste, add fish sauce to your own tasting.

2- 煮好既白饭3唛 (white rice 3 cup cooked)

1- Cut 1/4 off the pineapple like the picture above

2- 将菠萝肉取出, 浸入盐水

(我用刀, 插到最深, 但不要吉穿菠萝, 再沿边一路戒开, 然后用铁汤匙一匙毕出菠萝肉, 约15分钟)

做法 Methods:

1. 烧热锅,放一汤匙油烧热,加入江鱼仔爆脆,盛起。

Heat the wok, put 1 tbsp of oil, later add in the anchovies and fry until golden brown. Put aside.

2. 加少许油,后加打散了的鸡蛋,煎至8分熟,捣烂,放入少许酱油,盛起备用。

Add some oil, heat it and add in the beaten eggs, fried until 80% cooked and add some soy sauce. Dish off.

3. 加一点点油(看之前煎蛋后油有剩下多少而定),放入鸡柳碎,炒至白色,放入短豆和红萝卜,炒至香。

Add in some oil again (depends on how much oil left after frying eggs), put in the chopped chicken fillets and stir-fry till medium-well, add in green be slices and diced carrots. Fry until aromatic.

4. 后加黄梨(沥干的),翻炒几回后加入之前的煎蛋,然后饭,翻炒几次。

Drain the pineapples. Add in into the wok, stir-fry the ingredients for a while and toss in the fried eggs. Later pour in the rice and stir-fry for a while.

5. 加入调味料后再翻炒几回。倒入江鱼仔搅拌一会儿后熄火。盛起即可食用。

Add the seasonings and fried anchovies. Dish off.

注 TIPS:

@饭熟后隔一段时间才来炒饭会比较好吃。如果是午餐的话,建议是隔夜饭;如果是晚餐的话,可以用早上煲好的饭。

@ It will be tasted better if you use overnight rice to cook fried rice if it'll be a lunch or you can cook rice in the morning if it'll be a dinner.

@炒饭时用的油不要放太多,不然会比较湿口感不会太好。而且太油腻对身体也不好啦,哈哈!

@ Don't put too much oil while cooking fried rice, otherwise the fried rice will be a bit moist and it won't be tasted well. Furthermore, oil isn't good to health, right? =P

@蛋不需捣太烂,如果你还想吃到蛋的话。=P

@ If you still want to taste the eggs slices, please don't cut it into too *** aller pieces.
